Ingredients
Pastry
1/3 of pastry from Lemon meringue pie
Filling
- 4oz butter/margarine
- 4oz castor sugar
- 1 egg
- 1oz ground almonds
- 3oz self raising flour
- 1/2tsp almond essence
- 1-2tbsp jam, raspberry, strawberry or whatever you like
- Flaked almonds
Equipment
8-inch flan dish
Method
- Make the pastry as in the method for the Lemon meringue pie.
- Roll out the pastry and line the bottom of the 8-inch flan tin
- Spread the jam over the pastry
- In a sauce pan gently melt the butter, then stir in the sugar cooking for a minute
- Next take the mixture off the heat and add into it the egg, ground almonds, self raising flour, almond essence and combine.
- Pour this mixture on top of the jam in the flan dish, then sprinkle with flaked almonds
- Bake tart for about 30 minutes on 170 deg c fan
